BANGUS IN PINEAPPLE GINGER SESAME SAUCE

Bangus is one of the most versatile fish, it is also available locally and very affordable. We wanted to show how versatile Bangus is, so here's one of the dishes that turns simple Bangus into something new..

Serves 4
Ingredients:
  • 1 Whole Boneless Bangus (sliced into 4)
  • 120 g All Purpose Flour
  • salt and Pepper
  • 15 g Cooking Oil
  • 30 g Shallots, chopped
  • 250 g Pineapple Juice
  • 120 g honey
  • 250 g Pineapple Tidbits
  • 15 g Ginger
  • 15 g Cornstarch, dissolve in
  • 60 ml Water
  • 5 g Sesame Seeds, toasted




Procedure:

1. Season Bangus with salt and pepper.


2. Dredge in flour.


3. Fry in hot oil until light brown and crisp. Then set aside.



4. In a saucepan, heat 1 tablespoon oil, saute shallots, until soft.



5. Add Pineapple Juice, honey and ginger . Allow to cook for 10 minutes until reduce in half.



6. Add the Pineapple tidbits.




7. Thicken with Cornstarch dissolved in water. Remove from the heat. 



8. Pour sauce over the Bangus, sprinkle with sesame seeds. Serve.
